سمك مسبك المقادير : نصف كيلو سمك نصف كيلو طماطم 2 فص ثوم ملح فلفل ملعقة بقدونس مفروم نصف كوب ماء ملعقة زيت بقسماط مطحون الطريقة : ينظف السمك ويغسل ويتبل بالملح والفلفل ثم يغطى بالدقيق ويحمر فى الزيت يشوح الثوم المدقوق فى الزيت المتبقى ويضاف اليه الطماطم بعد تقشيرها والبقدونس وتتبل وتترك تغلى على النار يعزل الزيت ويضاف الماء ثم تصب الصلصة على السمك بعد وضعه فى صينية ويرش السطح بالبقسماط ثم بقليل من الزيت وتدخل فى فرن متوسطة الحرارة من 15 الى 20 دقيقة حتى يحمر السطح وبالهنا والشفا

طريقة جديدة نعرضها لك لتقديم طبق الدجاج على سفرتك بنكهة جديدة، وذلك اقتباسا من المطبخ التركي، لتنويع أصناف المأكولات التي تقدمينها إلى عائلتك وأصدقائك.. المقادير: ـ حبتان من البطاطس مسلوقتان. ـ دجاجة. ـ جزرة مبشورة. ـ كوسة مبشورة. ـ فصوص ثوم مبشورة. ـ ملعقة ملح. ـ نصف ملعقة فلفل أحمر. ـ بيضة مخفوقة. ـ ثلاث أرباع كوب لوز مفروم. طريقة التحضير: تُسلق الدجاجة في ماء مملح لنصف ساعة, ثم تُزال عظامها، وتُفرم جميع المقادير مع الدجاج في المفرمة ما عدا البيض واللوز.. يُشكل من هذا الخليط 8 قطع بيضاوية، وتُغمس كل قطعة في البيض وتُغطى باللوز، ثم تُقلى في زيت عميق, ثم تُقدم ساخنة.

كرات البيض الاسكتلندى المقادير: 4 بيض نصف كيلو لحم مفروم 5 فص ثوم مفروم نصف كيلو بصل مبشور - البهارات : 2 ملعقة صغيرة ملح 1 ملعقة صغيرة فلفل أسود 1 ملعقة صغيرة كمون مطحون قليل من القرنفل المطحون و الزنجبيل و القرفة و الزعتر المطحون 5 ملاعق بقسماط محمص مطحون (حسب الحاجة ) الطريقة: - يتم سلق 3 بيضات بوضعهم فى ماء مغلى مضاف إليه قليل من الخل و الملح لضمان عدم انكسار البيض لمدة 15 دقيقة ثم تبرد بماء فاتر . - تخلط بقية المقادير السابقة و معهم 1 بيضة نيئة و تعجن باليد جيداً . - يضاف البقسماط الناعم للخليط عند الحاجة حتى لا تكون العجينة لينة و تقسم العجينة إلى 3 أجزاء متساوية . - نأخذ كل جزء من العجينة على راحة اليد و تكور ثم نقوم بعمل فتحة فيها باستخدام أصبع الإبهام بشكل دائرى حتى نتمكن من ادخال البيضة المسلوقة داخل العجينة تماماً ثم نقوم باغلاق الفتحة بنفس العجينة حتى تصبح البيضة مغلفة تماما ً بالعجينة و نجهز كل الكرات بهذه الطريقة . - نرش البقسماط الناعم على كل أوجه هذه الكرات و الضغط عليها قليلا ً باليد حتى تلتصق بها . - نقلى الكرات بزيت غزير ساخن ثم ترفع الكرات من الإناء و توضع على ورق تنشيف لامتصاص الزيت الزائد . - تترك قليلا ًحتى تبرد ثم تقطع كل كرة نصفان و يظهر هنا شكل المقطع الدائرى به صفار البيض ثم البياض ثم اللحم المفروم ثم طبقة البقسماط المقلية بشكلهم الجميل الشهى . - طريقة التقديم : - يقدم البيض الاسكتلندى على طبق مغطى بالمقدونس . - يقدم معه المعكرونة الاسباجتى وسلطة الخضراوات الطازجة .

الدجاج الصينى بصوص الصويا المقادير: - صدور دجاج مقطعه بالطول خاليه من العظم - نشا - 1بصله مقطعه دوائر - 2 حبه فلفل بارد مقطعه بالطول - 1 فص ثوم - ربع كوب كاتشب أو معجون الطماطم - 2 كوب ماء - رشه ملح - 2ملعقه طعام صويا صوص حلوه - 2ملعقه طعام صويا صوص مالحه الطريقة: - تغلف الدجاج بالنشا من كل الجهات - ثم نقليها بزيت غزير حتى تشقر ثم تترك جانبا - نحمس البصل والثوم في قليل من الزيت - نضيف الفلفل البارد والكاتشب والصويا صوص والماء ورشه الملح - نضيف عليها الدجاج الذي سبق تحضيره - وتترك على نار هادئه لمده ربع ساعه - نقدمها مع الأرز الأبيض أو الأرز الأبيض بالشعيريه والسلطة.

المقادير: مقادير العجين : 2 كوب دقيق 2ملعقة طعام زيت نصف ملعقة شاي ملح ربع كوب ماء وممكن تحتاجين زيادة على حسب الحاجة نصف ملعقة شاي باكينج باودر مقادير الحشوة : بطاطا مقطعة مكعبات بصل + فلفل أسود + زنجبيل مبشور + كركم + كمون بازلاء قليل من الماء المغلي الطريقة: تخلط مقادير العجين حتى الحصول على عجينة متماسكة قليلاً وسهلة الفرد نحضر الحشوة ( يحمس البصل , ويضاف له الثوم والزنجبيل ويحرك قليلاً ثم تضاف بقية المقادير , تترك قليلاً على النار ثم يضاف القليل من الماء فقط كي لاتحترق الحشوة , وعندما تستوي الخضار ويجف ماؤها ,ترفع عن النار ترق العجينة لدوائر تقسم كل دائرة لقسمين ,يؤخذ نصف الدائرة ويلف حول الأصابع ليصبح كالقمع , تُحشى ثم تغلق جيداً ,وتقلى .
